To make Icewine, the grapes are left on the vine until after the first frost takes place. The grapes must be picked after November 15 and before 10 in the morning. The temperatures can not be higher than minus 8 degrees Celsius leaving the grapes in a frozen state. In this condition, the grapes are pressed which produces a highly concentrated juice that is very high in acids, sugars and aromatics.
